This is a scrumptious, Italian dish that will definitely satisfy your family, and have them asking for seconds! It has so many flavors going on with a delectable, creamy sauce. My only disclaimer is that this is not a low-calorie dish, so you’ll really want to watch your portions! [Read more…]
My husband’s favorite type of food is Italian, and that has been quite the challenge for me. While I love Italian food as well, it’s usually not the healthiest option, so I’ve been working on making some of our favorites a bit healthier! This Chicken Parmesan was definitely a success! [Read more…]
In my humble opinion, there is NOTHING like homemade chicken stock. I use it for so many things: the base to many of my sauces, chicken soup, of course, any vegetable or chicken based soup, and the liquid for any potatoes, rice, or pasta that I make if there is chicken in the main dish, and it will compliment well.

I have had a lot of chicken soup in my day, and I’m telling you- even though I’m biased- this is hands down the most amazing chicken soup in the entire world. And, on top of that, it’s clean, healthy, easy to make, and very filling! It’s a great soup to make and divide up for lunches for the week! [Read more…]
I LOVE salad, but I don’t always love how annoying and time consuming it can be to make one. This is my go-to salad, because it’s quick and easy to make, SUPER healthy, and with a couple swaps can be a light snack or a full meal! [Read more…]
The prep is very easy and only takes about 10 minutes- the perfect amount of time for your oven to preheat. The dish only needs to cook for 30-35 minutes, so you really can’t go wrong! [Read more…]
